The Ingredients

  • 1 cup milk (almond, coconut, hemp, raw milk)
  • 1 cup frozen blueberries

  • A little honey, stevia, or maple syrup to sweeten (optional)

Antioxidant Fruit Salad with Bee Pollen Recipe

Serves 4

The Skinny

Per 1-cup serving:

For the vanilla-infused honey:
1 vanilla bean
2 cups raw honey

For the fruit salad:
1/2 cup blueberries
1/2 cup blackberries
3 small plums, sliced
1 peach or nectarine, sliced
1-2 teaspoons bee pollen
2-3 tablespoons vanilla infused honey


  1. Make the vanilla infused honey by splitting the vanilla bean down the center, exposing the inside. Scrape the vanilla with a small spoon and stir into the honey. Cut the pod into 3 pieces and add that to the honey as well. Use on fruits, in desserts, or just by the spoonful as desired.
  2. Prepare the fruit and gently combine in a bowl. Top with bee pollen and drizzle with honey.
  • Healthy Breakfast


1 cup favorite pure fruit juice such as orange or apple (must be sugar free)

1 egg

1 banana

1 Tablespoon granulated bee pollen (pure)

1 Tablespoon liquid honey (pure)

Blend all these ingredients together with an electric handheld blender or in a regular electric blender.

  • Herb Tea Smoothie


1 cup of any herbal tea that has been brewed for five minutes then cooled down

1 cup of peaches, chopped and pitted

1 teaspoon powdered bee pollen

1 cup of frozen mangoes

¼ teaspoon of powdered cayenne pepper

½ cup of ice cubes

Place all of these ingredients into a blender. Blend until ingredients are smooth. The peaches can be substituted for other ripe fruit that is in season. This recipe also works well when using different kinds of herbal tea as a base, for example green tea, chamomile, kombucha, hibiscus, cat’s claw, or chai etc.

  • Ice Cream Float


2 cups fresh peaches (or other favorite fruit in season)

4 cups milk

¼ cup honey

1 teaspoon of bee pollen

½ teaspoon of almond extract (or preferred flavoring)

4 cups vanilla ice-cream

Mix the honey, fruit and 2 cups milk in an electric blender. Add in the extract, bee pollen and remaining milk and 2 cups of ice-cream. Blend these ingredients until smooth. Pour the rest of the ice-cream over the blended ingredients and serve. Extra fresh fruit can be added on top.

  • Honey Egg-Nog


2 tablespoons of honey

2 eggs that are beaten

2 cups of cold milk, or cold soy milk (plain) or rice milk (plain)

Pinch of ground nutmeg

½ teaspoon of vanilla essence

2 tablespoons granulated bee pollen

Combine the eggs with the bee pollen and honey and mix them well. Beat in the vanilla and milk. Sprinkle the nutmeg over the top. This recipe makes two servings.

  • Peach Honey Float


2 cups of fresh peaches, crushed

4 cups of milk, rice milk or almond milk

½ cup of honey

4 cups of cherry or vanilla ice-cream or vanilla rice ice-cream

Mix the honey and fresh peaches in a blender or container. Add 2 cups of the milk. Beat these ingredients and blend. Put in the almond extract and the rest of the milk as well as half the ice-cream. Beat these ingredients until smooth. Put into four to six long glasses and put the remaining ice-cream on top.

  • Bee Pollen Popcorn


½ cup uncooked popcorn

1 teaspoon of bee pollen

1/3 cup vegetable oil

2 teaspoons of salt

2 teaspoons of sugar

Heat oil in saucepan until hot. Add in popcorn kernels. Shake constantly over heat until popping stops. Remove the saucepan from the heat. Grind the bee pollen into fine powder (a flaxseed mill or coffee grinder works well). Sprinkle the powder over the popcorn then add sugar and salt to taste.

  • Healthy Drink


1 banana (ripe)

2 prunes, pitted and cooked

½ cup fresh orange juice

½ teaspoon lemon juice

1 tablespoon flax seeds (ground)

1 tablespoon liquid honey (pure)

Up to 1 tablespoon granulated bee pollen (pure)

Place all ingredients into a blender and mix until smooth and creamy. This recipe will make about ten ounces which is perfect for a light meal or breakfast for one person. Other variations in the ingredients could include using rice milk or plain milk in place of the lemon and orange juice. One tablespoon of almond butter or peanut butter can be added for added energy.
